Claire's Special Spaghetti Bolognaise

  • 1 onions diced

  • 2 cloves garlic minced

  • .5 kg pork mince (or what ever suits you!!)

  • 1 carrots grated

  • 1 stalks celery grated

  • 1 zucchini grated

  • 100g mush grated

  • 1 tbs stock paste (optional)

  • 400g tinned tomatoes

  • 3 tbsp tomato paste

  • 1 tbsp dried basil

  • 1 tbsp dried oregano

  • 1/2 teaspoon salt

  • cracked pepper

  • 2 bay leaves

  • 1 tsp sugar (to balance the

  • tomato acidity)



  • Heat oil in a large saucepan over a medium heat, add all vegetables and cook until onion is translucent.

  • Add mince to pot and stir until brown.

  • Add remaining ingredients and bring to the boil.

  • Simmer, stirring occasionally for 1.5 hours.

  • Remove bay leaves before serving with pasta or zucchini noodles

  • for a low carb option.


Serve over Penne or with zucchini or pasta noodles
Gnocchi Bog Pasta Bake – cook gnocchi to packet directions, mix in the bog mix and top with cheese. Bake in the oven until browned. Great with Bocconcini rather that cheddar.
OR Lasagne if you are feeling really fruity!
