  • 1 teaspoon of olive oil

  • 1 onion, finely diced

  • 2 garlic cloves, crushed

  • 1 stick celery, finely diced

  • 1 carrot, grated

  • 1 zucchini, grated

  • 1 tablespoon stock paste (optional)

  • 3 tbs Mexican Seasoning (I make mine with 1 tbs Cummin, 1 tbs Oregano, 1 tbs Paprika, 1 tsp Coriander all ground)

  • 500g mince of your choice

  • 2 tomatoes, diced

  • 1 corn cob, kernels removed



  • Heat oil in a large saucepan over a medium heat, add

  • all vegetables and cook until translucent.

  • Stir in Mexican seasoning and stir for 1 min so the flavours come out.

  • Add mince to pot and stir until brown.

  • Add remaining ingredients and cook down for 15 mins.

  • Serve with salad for a burrito bowl, or wraps/tacos
