      Beef Bacon and Cheese Pie

      Beef, Bacon & Cheese Pie

      Ingredients

      • 1 onion, diced

      • 1 clove garlic, crushed

      • 1 stick of celery, finely diced

      • 1 carrot, grated

      • 1 zucchini, grated

      • 1 tbs stock paste & 1 cup of water

      • 500g mince

      • 300g ham (free range if possible), sliced

      • 1 cup grated cheese

      • 1 tbs balsamic vinegar

      • 2 teaspoons corn flour, mixed with 1 tbs cold water

      • Salt & pepper

      • 5 potatoes, sliced thinly

       

       

      Instructions

      • Preheat your oven to 180C.

      • In a large pot, heat the oil & cook down the veggies until softened.

      • Stir in your mince and brown off. Add the stock & balsamic vinegar.

      • Cook down until mince is cooked, then add the cornflour mixture.

      • Stir in ham, taste and season with salt & pepper. Remove from heat.

      • Stir through cheese.

      • Halve the recipe and put one portion in a pie dish. Cover it with the potatoes and bake until crispy.

      • The other half of the recipe can be frozen or served with sweet potato mash in a couple of nights..
