Ingredients

1 onion, diced
-
1 clove garlic, crushed
-
1 stick of celery, finely diced

1 carrot, grated
-
1 zucchini, grated
-
1 tbs stock paste & 1 cup of water

500g mince
-
300g ham (free range if possible), sliced
-
1 cup grated cheese
-
1 tbs balsamic vinegar
-
2 teaspoons corn flour, mixed with 1 tbs cold water
-
Salt & pepper

5 potatoes, sliced thinly
Instructions

Preheat your oven to 180C.

In a large pot, heat the oil & cook down the veggies until softened.

Stir in your mince and brown off. Add the stock & balsamic vinegar.

Cook down until mince is cooked, then add the cornflour mixture.

Stir in ham, taste and season with salt & pepper. Remove from heat.

Stir through cheese.

Halve the recipe and put one portion in a pie dish. Cover it with the potatoes and bake until crispy.

The other half of the recipe can be frozen or served with sweet potato mash in a couple of nights..
